Embark on a nine-course journey and discover the essence of Azorean gastronomy with a feast of authentic flavors and ingredients native to the islands. Each dish will tell a story, based on the local gastronomic heritage, passed down through generations and influenced by the unique geographical conditions.
We propose a gastronomic journey through the history, culture, and identity of the islands, respecting the past and preserving the Azorean gastronomic heritage.

Chef’s Table
A unique and exclusive gastronomic experience where you can enjoy the most exclusive local products, recipes, and stories with a contemporary vision, bringing together the past, the present and the future. The meal is prepared and presented at the kitchen counter, with the personalized service of BIOMA chefs, allowing you to observe the creation of each dish.
The chefs present a 12-course tasting menu only available to a maximum of four people per day, sharing details about local ingredients, local gastronomic techniques and their inspiration in the stories and customs of the Azores.
The experience may be complemented with a selection of typical Azorean wines and drinks, carefully chosen by the BIOMA sommelier.

Rafael Ávila Melo
He graduated from the School of Tourism and Hotel Training in Ponta Delgada. He spent more than four years at the service of Nerua, at the Guggenheim Museum in Bilbao, Spain, classified with a Michelin Star and number 32 on The World’s 50 Best Restaurants list in 2019. During this period he accompanied Chef Josean Alija at international gastronomy events.

Franco Pinilla
He was head chef at Mishiguene, led by chef Tomás Kalika, ranked among The World’s 50 Best Restaurants and recommended by the Michelin Guide, and executive chef, with chef Julieta Caruso, at the Mezcla Group, where he acquired skills for practicing sustainable gastronomy. At Bioma he culminates his experience in a proposal for authentic gastronomy.
